Microgreens: an obsession

These are Dunn peas that I tried starting in water and transferring to a to-go container with dirt in it. I waited way too long with the peas in the water as they put out these crazy long roots that made it hard to spread them on the dirt. Also I ended up with non-deal positioning, sometimes peas on top of peas instead of on top of dirt. And every damn pea just slappin' root isn't what microgreens are all about.
According to internet resources, I should be able to eat these guys once they have grown their second set of leaves. But first, I need to make them "leggy" by putting the germinated seeds in darkness. That makes them stretch upwards seeking light. So I just placed another to-go bottom flipped over on top of them, sprayed them with filtered water at least twice daily. I didn't really want to drill holes so I didn't, I just put in some water on the bottom before putting the dirt in and it has kept the whole thing well hydrated pretty much with my occasional top spraying.
Yes, I know I'm a veterinarian and I don't exactly need the income from a microgreens business, nor is the quarantine optimal timing. But ya know what? I don't care. Also, I like to fancy myself a business lady. Also also, Imma do what I want. And dream about sweet sweet profits while staring at a single tiny crop.
